- One mug, 60 to 90 seconds, roughly 40 g protein.
- Chop the apple small so it softens before the batter overcooks.
- 1/2 teaspoon of nutmeg or pie spice is plenty.

- Fork or small whisk
- Knife and cutting board
Directions
- Grease the mug or bowl.
- Stir the protein powder, pancake mix, milk, spice, apple and sweetener together right in the mug until there's no dry powder left.
- Microwave on high for 60 seconds, then check. Keep going in 15-second bursts, up to 90 seconds, until the center is set.
- Let it cool for a minute before you dig in.

Apple pie is a whole afternoon project. This is apple pie's flavor squeezed into a mug and ready before the coffee finishes brewing. It's not pie, and it doesn't pretend to be, but warm apple and spice in a soft little cake gets surprisingly close.
Small apple, small pieces
The apple is the only thing here that can go wrong. Big chunks stay crunchy while the batter around them turns rubbery, because the microwave is done with the cake long before it's done with the fruit. Cut the apple about the size of a pea and it softens in the same 90 seconds the batter needs.
Go easy on the spice, too. Nutmeg is strong stuff, and half a teaspoon is enough to make the whole mug smell like October. Cinnamon or apple pumpkin pie spiceA ready-made blend of warm spices, usually cinnamon, nutmeg, ginger and cloves. Heads up
Protein batters go from tender to chewy fast. Pull it when the top looks dry and springs back, even if the edges seem a little soft. It keeps cooking for a minute after it comes out.
