Ingredients

You'll need

  • Microwave-safe mug or bowl
  • Fork or small whisk
  • Small bowl for the frosting

Directions

  1. Grease the mug, then stir in the protein powder, pancake mix, blueberries and milk until smooth.
  2. Microwave on high for about 90 seconds, until the center is cooked through.
  3. Let it cool for a minute or two.

Frosting

  1. Stir the protein powder into the yogurt or blended cottage cheese until smooth. Add mashed berries if you want it pink.
  2. Spread it over the bread right before eating.
Notes Keep leftovers unfrosted in the fridge for 2 to 3 days and warm them for 15 to 20 seconds. Roughly 285 calories and 40 g protein per serving, give or take.

Call it bread, call it a muffin. It's a mug of blueberry cake that's done in a minute and a half, and it doesn't really care what you call it. The name just makes it sound a bit more respectable at breakfast.

The frosting is the fun part

The bread is simple. The frosting is where it gets interesting: protein powder stirred into Greek yogurt turns into something thick, tangy and sweet that tastes a lot more like cream cheese frosting than it has any right to.

Cottage cheese works too, but only if it's blended smooth first. Stirred in straight from the tub, the curds stay curds, and nobody wants lumpy frosting. A few mashed blueberries give it a purple streak and a little extra fruit.

Tip

Frost it at the table, not in advance. The heat of the bread thins the yogurt out, so let it cool for a couple of minutes first.

Same berries, different shapes

This is close cousins with the Blueberry Cobbler Mug Cake, which puts the berries on top instead of mixing them in. Note

Frozen blueberries go straight in, no thawing. They bring a little extra water, so give it an extra 10 seconds if the middle looks wet.
