  • Large rimmed sheet pan
  • Skillet, if the vegetables aren't cooked yet
  • Pizza cutter or large knife

Directions

  1. Heat the oven to 350°F and lightly grease the sheet pan if you like.
  2. Lay four tortillas over the bottom of the pan, overlapping so they cover it completely. It's fine if they climb the sides a bit.
  3. Sprinkle half the cheese over the tortillas. Add the chicken, peppers and onions and cilantro, then the rest of the cheese.
  4. Cover with the other four tortillas, overlapping again.
  5. Bake 15 minutes, until the top is lightly golden and crisp and the cheese has melted.
  6. Slide it onto a cutting board, let it rest a minute, then cut into squares. Serve with salsa and guacamole.
Notes Leftovers keep 2 to 3 days in the fridge. Reheat at 350°F in the oven, toaster oven or air fryer to bring back the crunch; the microwave makes them soft. Roughly 450 calories and 25 g protein per serving, give or take.

Making quesadillas for a table of people usually means standing at the stove flipping them one at a time while everybody else eats. This puts all of it on one sheet pan in one go. Four tortillas on the bottom, the fillings, four on top, and fifteen minutes in the oven.

Cook the vegetables first

The oven doesn't have time to soften raw peppers and onions in fifteen minutes. They'll come out crunchy and watery. Sauté them first until they're tender and a little browned, and let any liquid cook off. Leftover fajita vegetables are ideal.

Tip

Overlap the tortillas generously, especially in the middle. Gaps let cheese leak out and burn on the pan.

Cheese on both sides

The filling is sandwiched between two layers of cheese, one under and one over, and that's what makes it hold together when you cut it. With cheese only on the bottom, the top tortillas slide right off. A pizza cutter makes clean squares, and a short rest before cutting helps keep everything inside.
