  • Shake protein powder and 1/2 cup milk separately first, then pour it over the coffee.

  • Shaker bottle or blender
  • Glass or mug

Directions

Every drink

  1. Put the protein powder and milk in a shaker bottle or blender, without the coffee.
  2. Shake or blend until completely smooth.
  3. Pour the coffee into a glass, then pour the protein mixture over the top. Stir or don't.

PSL cold foam

  1. Add the pumpkin pie spice with the powder and milk, and blend until it's very smooth and slightly thickened.
  2. Spoon or pour it over the coffee, or drink it on its own. Top with whipped cream if you like.
Notes Drink it right away; the foam settles as it sits. Brewed coffee and cold brew both work. Roughly 285 calories and 50 g protein for the cold brew, and about 550 calories and 100 g protein for the whole four-scoop PSL batch, give or take.

Protein powder dumped straight into coffee is a mistake most people only make once. It clumps, it floats, and the last sip is a sludge. Both of these get around that the same way: make a protein creamer first, then add the coffee.

Mix it separately

Powder dissolves best in something cold and a little fatty, so it goes in the shaker bottle with half a cup of milk and nothing else. Shake it until there's nothing left on the sides, and you've got a thick, sweet creamer. Pour that over the coffee and it blends in cleanly, or sits on top in a layer if you pour slowly. Coffee first, creamer second.

Heads up

Protein powder can clump in very hot coffee, even pre-mixed. Cold brew or iced coffee is the easy route. If you want it hot, let the coffee cool a few minutes before the creamer goes in.

Cold foam is just a thicker creamer

The PSL version doubles the powder to four scoops against the same half cup of milk, plus a quarter teaspoon of pumpkin pie spice. With that much powder it blends up thick and a little foamy, closer to the cold foam on a coffee shop drink than a creamer. It makes more than one cup needs, so it's also fine on its own with a spoon.
