Chocolate Chip Protein Cookies (Microwave)

- Two scoops of protein powder, coconut flour, a splash of milk and chips.
- Microwave about 45 seconds. It should still look a touch soft.
- Add milk a tablespoon at a time until it's a thick dough.
- Overcook it by 15 seconds and it turns to rubber.

Directions
- Stir the protein powder and coconut flour together.
- Add 2 tablespoons of milk and mix. Keep adding a little at a time until you have a thick, smooth dough. Stir in the chocolate chips.
- Spray a small microwave-safe plate or shallow bowl.
- Press the dough into one big cookie or a few small ones, about the same thickness all over.
- Microwave on high for about 45 seconds. It's done when it's set but still soft.
- Let it cool a minute in the dish, then eat it warm.

Forty-five seconds is not a lot of time to bake a cookie, and that's the whole appeal. Mix it in a bowl, press it onto a plate, and it's done before you've put the milk back in the fridge.
The microwave is the hard part
Microwave cookies have a very narrow window. At the right moment it's soft and cakey in the middle. Fifteen seconds past that and the protein tightens up into something closer to a pencil eraser. So:
- Press it evenly. Thick in the middle and thin at the edges means raw in one spot and rubber in another.
- Start short. Every microwave is different. Check at 35 or 40 seconds the first time and learn yours.
- Pull it while it looks underdone. It keeps setting on the plate.
Heads up
If it's already tough, a thin smear of peanut butter hides a lot of sins. Better to just take it out earlier next time.
Dough, not batter
