  • Skillet
  • Small oven-safe dish or ramekin
  • Spatula

Directions

The filling

  1. Season the ground meat with garlic powder and Italian seasoning. Brown it in a skillet over medium heat, breaking it up, then drain off any fat and set it aside.
  2. Spray the same skillet and cook the peppers until soft, 3 to 5 minutes.
  3. Return the meat to the pan, stir in the pizza sauce and simmer a few minutes.

Into the bowl

  1. Turn on the broiler.
  2. Spoon half the filling into a small oven-safe dish. Add about a third of the mozzarella, then the rest of the filling.
  3. Top with the remaining mozzarella and the pepperoni.
  4. Broil 3 to 4 minutes, watching the whole time, until the cheese is bubbly and spotted golden.

Garlic bread

  1. Split the bun open, spray the cut sides with butter and dust with garlic powder.
  2. Toast it cut side down in a warm skillet over medium heat, 1 to 2 minutes per side, until golden.
Notes The pizza bowl keeps 2 to 3 days in the fridge and reheats in the microwave or oven. The garlic bread is best fresh. Roughly 430 calories and 41 g protein with the bread, or 350 calories and 37 g protein for the bowl alone, give or take.

Sometimes you want pizza and what you really want is the top half. The sauce, the melted cheese, the curled-up pepperoni. This bowl is that: all toppings, no crust, and a little garlic bread on the side so you've still got something to dip.

Cheese in the middle

Most pizza bowls just pile cheese on top, and the bottom half ends up as meat sauce. The fix is a layer of mozzarella in the middle. Half the filling, a third of the cheese, the rest of the filling, then the rest of the cheese and the pepperoni. Every spoonful gets a string of cheese, not just the first three.

Warning

Don't walk away from the broiler. Light mozzarella goes from melted to scorched in under a minute. Stay right there and pull it the moment it's bubbling with a few brown spots.

The hot dog bun trick

A split hot dog bun, sprayed with butter, dusted with garlic powder and toasted face down in a skillet, is a legitimately good garlic bread. It's the right size for one, it crisps fast, and it's much lighter than a slab of Texas toastBread sliced about twice as thick as a normal loaf, so it can take butter, heat and a lot of fillings..
