  • Large microwave-safe mug
  • Fork or small whisk

Directions

  1. Grease a large mug. Add the protein powder, pancake mix, cocoa and milk and stir until smooth.
  2. Microwave on high for 60 to 90 seconds. Start checking at 60 seconds.
  3. Stop when it's cooked through but still moist and fudgy on top.
  4. Let it cool a minute, then add the chocolate sauce or whipped cream and the sprinkles.
  5. Eat it warm, straight from the mug.
Notes Best fresh. Leftovers keep a day or two in the fridge; warm them 10 to 15 seconds in the microwave. Roughly 285 calories and 40 g protein per serving, give or take.

The lunchbox brownie with the rainbow candy bits on top is pure nostalgia, mostly because of those sprinkles. This mug version keeps the look and the chocolate, skips the plastic wrapper, and is ready in about the time it takes to rinse the fork.

Stop at fudgy

Protein brownies have one enemy, and it's a few extra seconds. Too long and it turns into a chocolate sponge. Check at a minute. If the top still looks a little wet but the sides have pulled away, it's done. It keeps setting as it cools.

Tip

Use a big mug. The batter rises quite a bit before it settles, and a small mug means cleaning chocolate off the microwave plate.

Mix it smooth

Cocoa powder clumps, and those little dry pockets taste bitter. Stir until there are no dry streaks, scraping the bottom of the mug with the fork.

Note

Candy-coated chips hold their color better than rainbow sprinkles on a warm brownie. Sprinkles tend to bleed.
