- Mix it right in the mug, microwave about 90 seconds, check at 60.
- Chopped strawberries go into the batter, not just on top.
- Optional frosting: 2 tablespoons protein powder + 4 tablespoons Greek yogurt.
- Pull it while it's still moist. It sets as it cools.

- Fork or small whisk
- Small bowl, for the frosting
Directions
Brownie
- Grease a microwave-safe mug or bowl.
- Stir the protein powder, pancake mix, cocoa, milk and strawberries together until smooth. You can do this right in the mug.
- Microwave on high for about 90 seconds, checking at 60 seconds. It's done when it's cooked through but still moist.
- Let it cool a minute or two.
Frosting (optional)
- Mix the protein powder into the yogurt or blended cottage cheese until smooth. Add mashed berries if you want it pink.
- Spread over the cooled brownie and eat it warm.

Chocolate and strawberries is about as safe a pairing as exists. This version puts the berries inside the batter, so every bite gets a little pocket of warm, jammy fruit instead of a garnish that slides off.
Check it at 60 seconds
Mug brownies go from fudgy to dry faster than you'd think, and frozen strawberries add water that can throw the timing off either way. Open the door at 60 seconds and look at the middle. If it's still wet and shiny, give it more in 15-second bursts. If it's just barely set, stop. It keeps cooking in the mug for another minute.
Tip
If you're using frozen strawberries, chop them while they're still hard. Thawed ones turn to mush on the cutting board and bleed into the batter.
