You'll need

  • Microwave-safe bowl or mug
  • Fork or small whisk
  • Toothpick

Directions

  1. Stir the protein powder, pancake mix and milk together until smooth.
  2. Pour it into a greased bowl or mug and scatter the blueberries over the top.
  3. Microwave on high for about 90 seconds, until a toothpick in the center comes out clean.
  4. Let it cool slightly. Frost it if you like, and eat it warm.
Notes Best fresh. Unfrosted leftovers keep 2 to 3 days in the fridge; warm them for 15 to 20 seconds. Roughly 285 calories and 40 g protein per serving, give or take.

A real cobbler wants a baking dish, an oven and the better part of an hour. This one wants a bowl and 90 seconds. What you get is a soft, cakey base with a layer of hot, jammy blueberries on top, which is most of what you wanted from cobbler anyway.

Berries on top, not in

The one real difference between this and the Blueberry Mug Bread is where the fruit goes. Mix the berries in and you get a muffin. Scatter them on top and they burst and slump into the surface as the batter rises around them, which is a lot more cobbler-ish.

A wider bowl helps here. More surface means more berries sitting on top, and a shallower cake cooks more evenly than a tall one.

Tip

The toothpick test is worth doing. Go in through a gap between berries, not through one, or you'll get purple juice and think it's raw batter.

Dress it up or don't

It's good plain and warm. The yogurt frosting turns it into more of a dessert. If you've got the oven on anyway and want an actual crumb topping, the Strawberry Oat Crumble scratches the same itch. And the Double Berry Mug Muffin is the move when you've got a mix of berries to use up.

Blueberries straight out of the microwave are molten. Give it a minute or two before the first bite.
