Ingredients

You'll need

  • Standard muffin tin
  • Knife and cutting board
  • Butter knife or offset spatula

Directions

  1. Heat the oven to 375°F and grease the muffin tin well.
  2. Line each cup with a slice of raw bacon, pressing it against the bottom and around the sides in a ring. The ends can overlap.
  3. Crack an egg into each bacon cup and season with salt and pepper.
  4. Sprinkle the peppers, spinach and cheese over the eggs.
  5. Bake 20 to 25 minutes, until the eggs are set how you like them and the bacon looks cooked.
  6. Cool a few minutes in the tin, then run a knife around each one and lift it out.
Notes Airtight in the fridge they keep 4 to 5 days; reheat 30 to 60 seconds in the microwave or in a toaster oven. For a dozen, double everything. Roughly 144 calories and 10 g protein per muffin, give or take.

No flour, no batter. The "muffin" is a slice of bacon curled into a ring, and the filling is a whole egg topped with peppers, spinach and cheese. It's about as simple as a make-ahead breakfast gets.

Raw bacon, curled high

The bacon goes in raw here. It cooks in the same 20 to 25 minutes the egg does, and the fat renders down around the egg as it bakes. Press the slice flat against the bottom of the cup and wrap it up the sides. If a slice comes up short, patch the gap with part of another one, or the egg will find the hole and run out underneath.

Heads up

Bacon shrinks as it cooks. A ring that looks snug going in will pull down a bit, so press it as high up the sides as it'll go.

Chop the vegetables small

The peppers and spinach sit on top of the egg, so they need to be finely chopped to cook through in time. Big chunks stay crunchy and make the cups harder to pop out clean.
