  • 375°F: 15 minutes, flip, then about 5 more, to 165°F.

  • Air fryer
  • Large bowl, plus a clean one for tossing
  • Tongs
  • Baking sheet, for keeping wings warm
  • Small saucepan and whisk

Directions

Prep

  1. Heat the air fryer to 375°F.
  2. Pat the wings very dry with paper towels.
  3. Mix the paprika, garlic powder, onion powder and pepper in a large bowl. Add the wings and toss to coat. Let them sit 10 minutes at room temperature.

Cook

  1. Cook half the wings in a single layer for 15 minutes. Flip with tongs and cook about 5 minutes more, until crisp and 165°F inside.
  2. Spread the first batch on a baking sheet in a 200°F oven to stay warm, and cook the second batch the same way.
  3. While the last batch cooks, warm the hot sauce and butter in a small saucepan over medium-high heat, whisking, 2 to 3 minutes, until the butter melts and it's smooth. Don't let it boil hard.

Finish

  1. Put all the wings in a clean bowl, pour the sauce over them and toss.
  2. Serve right away with the dressing, carrots and celery.
Notes Wings are best fresh. Leftovers keep 1 to 2 days in the fridge; reheat at 350°F to 375°F in the air fryer to bring back some crunch. The sauce may separate a little.

Crisp wings without a pot of oil is the thing the air fryer was practically invented for. A dry rub, two batches and a butter-and-hot-sauce toss at the very end is the whole method.

Dry skin, dry rub

Crispy chicken skin is really just skin that's lost its water. Anything you can do to remove moisture before cooking helps, so pat them dry, properly, until the paper towel stops getting damp. The rub is all dry spices on purpose. No oil, no sauce, nothing wet to steam through.

The ten-minute rest after seasoning lets the rub settle onto the skin and takes a little of the fridge chill off, so they cook more evenly.

Heads up

Two batches, not one crowded one. Wings piled on each other steam where they touch and come out rubbery on one side.

Sauce at the end

Sauced wings don't crisp. Toss them after cooking, in a big clean bowl with room to move. The butter mellows the vinegar in the hot sauce and helps it cling. Keep the heat moderate while you melt it; a hard boil breaks the sauce.
