- Four ingredients: cooked chicken, enchilada sauce, cheese, tortillas.
- Layered, not rolled. Tear the tortillas to cover the pan.
- 350°F, 30 minutes covered, then cheese on and 5 to 10 uncovered.
- Rotisserie chicken makes it about 10 minutes of hands-on work.

- 2-quart baking dish (8x8 or similar)
- Large bowl
- Aluminum foil
Directions
Layer
- Heat the oven to 350°F and grease the dish.
- Spread 1/4 cup of the sauce over the bottom of the dish.
- In a bowl, mix the chicken, 3/4 cup of the sauce and half the cheese.
- Cover the bottom with 4 tortillas, tearing or overlapping them to fill the gaps.
- Spread half the chicken mixture on top and drizzle with 1/4 cup sauce.
- Add the other 4 tortillas, the rest of the chicken, and the last 1/2 cup of sauce.
Bake
- Cover tightly with foil and bake 30 minutes.
- Uncover, scatter the rest of the cheese on top, and bake 5 to 10 minutes more, until melted and bubbling.
- Rest 5 to 10 minutes, then add whatever toppings you like.

Rolled enchiladas are lovely, and they're also the kind of fiddly that makes you reconsider dinner halfway through. Stack everything flat instead and you get the same flavors with none of the cracked tortillas. Four ingredients, a 2-quart dish, and most of the time is the oven's.
Why the sauce goes in stages
The sauce gets split five ways, and it's worth following. A thin layer on the bottom keeps the first tortillas from sticking. Some goes into the chicken so the filling isn't dry. The rest gets drizzled between layers so the tortillas soften evenly instead of staying leathery in the middle.
Tip
Rotisserie chicken is the move here. Shred it while the oven heats and this is genuinely a ten-minute prep.
Foil first, cheese last
Baking covered lets the tortillas steam and soak up sauce. The cheese goes on only after the foil comes off, so it melts and browns instead of welding itself to the foil. Leftover rotisserie chicken from this one also works in High Protein Mexican Chicken Salad.
