Ingredients

You'll need

  • Mini muffin pan, or a microwave-safe mug
  • Mixing bowl
  • Fork or small whisk

Directions

Batter

  1. Stir the protein powder, pancake mix, milk, raspberries and white chocolate chips together until smooth.
  2. Grease a mini muffin pan or a microwave-safe mug.

Cook it one of two ways

  1. Oven: heat to 350°F, divide the batter between the mini muffin cups and bake about 8 minutes, until a toothpick comes out clean.
  2. Microwave: pour the batter into the greased mug and cook on high for 60 to 90 seconds, until cooked through.

Finish

  1. Let them cool a few minutes before eating.
Notes Keeps in an airtight container for a day at room temperature or 2 to 3 days in the fridge. Warm for 10 to 20 seconds. Roughly 250 calories and 40 g protein per serving, give or take.

Tart raspberry and sweet white chocolate balance each other out, which is handy when the base is a protein batter that can lean a little flat on its own. A teaspoon of chips doesn't sound like much, but spread across a tray of mini bites, every one gets a bit.

Bites or mug cake

The oven route is worth the extra few minutes if you have them. Mini muffin cups give you more browned edge per bite, and they're easier to grab and go. The mug is for when you want something in under two minutes and don't mind eating it with a spoon. It's the same fork in the road as the Old-Fashioned Mini Donut Bites.

Tip

Use frozen raspberries straight from the bag and stir them in last. They stay in pieces instead of turning the whole batter pink and wet.

Knowing when they're done

Berries hold moisture, so the spot around a raspberry can look underbaked even when the bite is cooked. Test with a toothpick between berries. For the mug, check at 60 seconds and add time in short bursts.
