Ingredients

You'll need

  • Mixing bowl
  • Fork or small whisk
  • Mini muffin pan, or a microwave-safe mug or cereal bowl

Directions

  1. If you're baking mini muffins, heat the oven to 350°F.
  2. Stir the protein powder, pancake mix, milk, blueberries and cinnamon together just until combined.
  3. Grease the mini muffin pan or the mug.

Baked mini muffins

  1. Fill the cups and bake about 8 minutes, until the tops are set and spring back.

Microwave muffin

  1. Pour the batter into the mug or bowl and microwave on high for about 90 seconds. If the center still looks wet, add 10 to 15 seconds.

Finish

  1. Cool briefly and serve.
Notes Best fresh; leftovers keep a day at room temperature or 2 to 3 days in the fridge, and reheat in 15 to 20 seconds. Roughly 285 calories and 40 g protein per serving, give or take.

Here's the base the rest of this thread is built on: protein powder, protein pancake mix, milk and a handful of blueberries. Most of the other mug muffins are this recipe wearing a different hat. What makes this one different is that you can also bake it.

Oven or microwave

The microwave is faster, obviously. Ninety seconds and you've got one big, soft muffin in a mug. The oven takes longer to heat up, but mini muffins bake in about 8 minutes and come out with actual browned edges and a slightly firmer bite, which is something the microwave just can't do.

Neither is better. The mug is for when you're hungry now. The mini muffins are for when you've got a few extra minutes and want something to grab on the way out.

Tip

Frozen blueberries go straight in without thawing, but they add moisture. In the microwave, that usually means an extra 10 to 15 seconds.

First batch is a test

This recipe leans hard on the protein powder and pancake mix, and brands behave very differently. Some make a thick batter, some a thin one; some cook up fluffy, some dense. Make it once as written, then adjust. Batter too stiff? A splash more milk.

Heads up
