  • Jar with a lid
  • Measuring spoons
  • Spoon

Directions

  1. Put the hemp hearts, chia, sesame seeds and coconut in a jar.
  2. Add the almond milk, sweetener, vanilla, and the cinnamon and salt if using.
  3. Put the lid on and shake hard, making sure no chia is stuck in a clump at the bottom.
  4. Refrigerate overnight, or at least 4 to 6 hours, so the chia gels.
  5. In the morning, stir. Loosen it with a splash of milk if it's too thick, then add toppings and eat it cold.
Notes Covered, it keeps 3 to 4 days in the fridge and thickens as it sits. Roughly 244 calories and 9.7 g protein per serving, give or take.

Oatmeal without oats sounds like a trick question. But the texture is what people actually want from overnight oats, and seeds can get you most of the way there. Hemp hearts are soft and a little nutty, chia turns to gel in the fridge, and coconut gives it some chew. It's five minutes of stirring the night before.

The chia does the work

Chia seeds soak up liquid and swell into a gel, and that's what turns a jar of loose seeds and milk into something thick and spoonable. They need two things: time and an even spread. Left alone, chia sinks and forms one solid clump at the bottom of the jar. Shake it hard, wait a few minutes, and shake it again if you're still in the kitchen.

Tip

Make a few jars at once. They keep for 3 to 4 days, and each one gets thicker the longer it sits, so plan on an extra splash of milk for the later ones.

Morning adjustments

It'll be stiff straight out of the fridge. Stir it, add milk until it's the texture you like, and top it. Berries go especially well.
