Sweet Potato Hash

Ingredients:

  • 1/2 cup diced ham
  • 2 sweet potatoes, diced and peeled
  • 1 red bell pepper, diced
  • Biscuits or rolls
  • 4 eggs
  • 2 tsp. smoked paprika
  • 3 cloves garlic, minced
  • 1/2 tsp. season salt & pepper

Directions:

  1. Dice potatoes, then microwave them for 3 minutes with about 1/4 cup of water.
  2. Heat griddle to 375-400 degrees and put down your potatoes and ham.
  3. Using a steak weight on the potatoes is optional.
  4. Add onions and peppers, then season the potatoes.
  5. Squirt some water and cover the veggies with a dome to steam.
  6. When the potatoes start to brown and your veggies are done, lower the temperature to 300 degrees and cook your eggs. Refer to the “Eggs to Order” recipe.
  7. Place your potatoes on a plate, top them with your eggs, and serve with biscuits or rolls.
  8. Grab yourself a Bloody Mary and enjoy!
