Sweet Potato Hash
Ingredients:
- 1/2 cup diced ham
- 2 sweet potatoes, diced and peeled
- 1 red bell pepper, diced
- Biscuits or rolls
- 4 eggs
- 2 tsp. smoked paprika
- 3 cloves garlic, minced
- 1/2 tsp. season salt & pepper
Directions:
- Dice potatoes, then microwave them for 3 minutes with about 1/4 cup of water.
- Heat griddle to 375-400 degrees and put down your potatoes and ham.
- Using a steak weight on the potatoes is optional.
- Add onions and peppers, then season the potatoes.
- Squirt some water and cover the veggies with a dome to steam.
- When the potatoes start to brown and your veggies are done, lower the temperature to 300 degrees and cook your eggs. Refer to the “Eggs to Order” recipe.
- Place your potatoes on a plate, top them with your eggs, and serve with biscuits or rolls.
- Grab yourself a Bloody Mary and enjoy!
