Sausage Smash Croissant

Ingredients:

  • Ground sausage
  • 2 eggs, scrambled
  • American cheese
  • 2 croissants, sliced
  • Salt and pepper
  • Chipotle mayo

Directions:

  1. Heat griddle to 350 degrees. Add a small amount of oil.
  2. Form sausage into loosely packed 3 oz. balls.
  3. Smash sausage balls into the griddle as thin as possible. Cook for 4 minutes per side or until 155 degrees.
  4. Butter and toast croissants on the griddle, about 2 minutes.
  5. Turn off heat and pour scrambled eggs on the griddle. Move them around with a spatula until they reach the desired consistency.
  6. Assemble the sandwich with egg, cheese, sausage, and chipotle mayo. Enjoy!
