How to Make Eggs

Scrambled:

  1. Heat griddle between 275-325 degrees.
  2. Place 1 pad of butter on the griddle and add the eggs.
  3. Use a fork to break eggs and scramble with a little water.
  4. Slowly pour eggs onto butter, then create a well in the middle. Let them sit and set up.
  5. Pull eggs from the griddle right before they look done.

Sunny Side Up:

  1. Heat griddle between 275-325 degrees.
  2. Place 1/2 Tbsp. of oil on the griddle and add the egg.
  3. As the egg cooks, pull whites out with the tip of the spatula.
  4. Drip hot oil from the griddle onto whites to help cook them.
  5. Cook until whites are fully cooked and the yolk is still runny.

Basted:

  1. Heat griddle between 275-325 degrees.
  2. Place 1/2 Tbsp. of oil on the griddle and add the egg.
  3. Squirt water or place an ice cube next to the egg, then cover with a dome or lid.
  4. Cook for 2 to 3 minutes until whites are set and the thin layer of whites on top of the yolk turns white as well.

Over Easy:

  1. Heat griddle between 275-325 degrees.
  2. Place 1/2 Tbsp. of oil on the griddle and add the egg.
  3. As the egg cooks, pull whites out with the tip of the spatula.
  4. Drip hot oil from the griddle onto whites to help cook them.
  5. Flip and cook for 30 to 45 seconds for over easy. For over medium, cook for 1 minute more. For over hard, cook for 1.5 to 2 minutes.
