Hash Brown Omelet

Ingredients:

  • 1 Tbsp. butter
  • 1 Tbsp. canola oil
  • 1 cup of hash browns
  • 3 eggs, scrambled
  • Diced peppers and onions
  • Diced ham (or meat of choice)
  • 2 slices of American cheese
  • Salt and pepper to taste

Directions:

  1. Heat griddle to 375 degrees, then place down your butter and oil.
  2. Toss your hash browns in the oil and butter, then spread them out in a thin layer.
  3. Let them cook for 7-10 minutes or until they start to look golden brown on the edges.
  4. Sauté your meat and diced veggies while the hash browns cook.
  5. Pour your eggs slowly directly onto the hash browns, then add salt and pepper.
  6. Place your meat and veggies on top of the eggs.
  7. Top with cheese, then fold it over three times like an envelope.
  8. This goes great with a Baileys and coffee!
