Hash Brown Omelet
Ingredients:
- 1 Tbsp. butter
- 1 Tbsp. canola oil
- 1 cup of hash browns
- 3 eggs, scrambled
- Diced peppers and onions
- Diced ham (or meat of choice)
- 2 slices of American cheese
- Salt and pepper to taste
Directions:
- Heat griddle to 375 degrees, then place down your butter and oil.
- Toss your hash browns in the oil and butter, then spread them out in a thin layer.
- Let them cook for 7-10 minutes or until they start to look golden brown on the edges.
- Sauté your meat and diced veggies while the hash browns cook.
- Pour your eggs slowly directly onto the hash browns, then add salt and pepper.
- Place your meat and veggies on top of the eggs.
- Top with cheese, then fold it over three times like an envelope.
- This goes great with a Baileys and coffee!
