Golden Breakfast Potatoes
Ingredients:
- 2 medium Yukon Gold potatoes (scrubbed)
- 2 tsp. season salt
- 1 tsp. pepper
Directions:
- Heat griddle to 375 degrees.
- Bake potatoes in the oven the night before, then cool down and dice. (Alternative method) Dice potatoes then add 3 Tbsp. water and microwave on high for 2 minutes.
- Toss potatoes with season salt, pepper, and oil.
- Place on griddle and cook undisturbed for 5 minutes. If you have a steak weight, put it on top for more browning.
- Flip and cook for 5 more minutes.
- Toss potatoes with a spatula and cook for a final 5 minutes (15 minutes total).
- Either move them to a cool part of the griddle to wait for the rest of the food, or put them on a plate and dig in! Don’t forget an Irish Coffee as well.
