Golden Breakfast Potatoes

Ingredients:

  • 2 medium Yukon Gold potatoes (scrubbed)
  • 2 tsp. season salt
  • 1 tsp. pepper

Directions:

  1. Heat griddle to 375 degrees.
  2. Bake potatoes in the oven the night before, then cool down and dice. (Alternative method) Dice potatoes then add 3 Tbsp. water and microwave on high for 2 minutes.
  3. Toss potatoes with season salt, pepper, and oil.
  4. Place on griddle and cook undisturbed for 5 minutes. If you have a steak weight, put it on top for more browning.
  5. Flip and cook for 5 more minutes.
  6. Toss potatoes with a spatula and cook for a final 5 minutes (15 minutes total).
  7. Either move them to a cool part of the griddle to wait for the rest of the food, or put them on a plate and dig in! Don’t forget an Irish Coffee as well.
