Fresh Hash Browns from Scratch

Ingredients:

  • 2 medium russet potatoes, peeled (or 1 lb.)
  • 3 Tbsp. of oil
  • Salt and pepper to taste

Directions:

  1. Peel and grate potatoes into a large bowl of water. The water will prevent the potato from turning brown.
  2. Drain the potatoes using a colander and rinse until the water runs clear to remove the starch.
  3. Wring out the potatoes in your hands, then spread them on a towel and press with another towel to dry.
  4. Fluff the potatoes and let them air dry for a few minutes.
  5. Heat griddle to 375 degrees. Add oil and butter to the griddle.
  6. Place potatoes on the griddle and spread flat. Season with salt and pepper.
  7. Place a steak weight, with oil on it, on top of the hash browns.
  8. Cook for 5 to 6 minutes per side or until golden brown.
  9. Enjoy with a Mimosa while you wait!
