Fresh Hash Browns from Scratch
Ingredients:
- 2 medium russet potatoes, peeled (or 1 lb.)
- 3 Tbsp. of oil
- Salt and pepper to taste
Directions:
- Peel and grate potatoes into a large bowl of water. The water will prevent the potato from turning brown.
- Drain the potatoes using a colander and rinse until the water runs clear to remove the starch.
- Wring out the potatoes in your hands, then spread them on a towel and press with another towel to dry.
- Fluff the potatoes and let them air dry for a few minutes.
- Heat griddle to 375 degrees. Add oil and butter to the griddle.
- Place potatoes on the griddle and spread flat. Season with salt and pepper.
- Place a steak weight, with oil on it, on top of the hash browns.
- Cook for 5 to 6 minutes per side or until golden brown.
- Enjoy with a Mimosa while you wait!
