Easy Camping Breakfast Tacos

Ingredients:

  • 1 lb. of breakfast sausage
  • 1/2 carton of liquid eggs
  • 1 red onion, diced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • Shredded Mexican cheese
  • 6-inch flour tortillas
  • 2 cans of diced potatoes
  • Blackstone breakfast blend or any all-purpose seasoning
  • Hot sauce

Directions:

  1. Heat griddle to 350-375 degrees. Add a small amount of oil.
  2. Place ground sausage, canned potatoes, and diced veggies on the griddle.
  3. Sprinkle everything with your Blackstone Breakfast Blend.
  4. Cook sausage for 10 minutes or until no longer pink, chopping it up with a spatula.
  5. Toss potatoes and veggies periodically.
  6. Mix half the peppers and onions with the potatoes and half of them with the sausage.
  7. Scramble eggs with sausage until they are set, then add shredded cheddar cheese.
  8. Open a campsite breakfast beer and enjoy. If you’re feeling adventurous, add some chives.
