Easy Camping Breakfast Tacos
Ingredients:
- 1 lb. of breakfast sausage
- 1/2 carton of liquid eggs
- 1 red onion, diced
- 1 red pepper, diced
- 1 green pepper, diced
- Shredded Mexican cheese
- 6-inch flour tortillas
- 2 cans of diced potatoes
- Blackstone breakfast blend or any all-purpose seasoning
- Hot sauce
Directions:
- Heat griddle to 350-375 degrees. Add a small amount of oil.
- Place ground sausage, canned potatoes, and diced veggies on the griddle.
- Sprinkle everything with your Blackstone Breakfast Blend.
- Cook sausage for 10 minutes or until no longer pink, chopping it up with a spatula.
- Toss potatoes and veggies periodically.
- Mix half the peppers and onions with the potatoes and half of them with the sausage.
- Scramble eggs with sausage until they are set, then add shredded cheddar cheese.
- Open a campsite breakfast beer and enjoy. If you’re feeling adventurous, add some chives.
