Diner Style Home Fries
Ingredients:
- 3 russet potatoes
- 1 Tbsp. of butter
- Oil
- 1/2 tsp. garlic powder
- 1 tsp. paprika
- Pinch of cayenne
- Salt & pepper to taste
Directions:
- Heat griddle to 350-375 degrees.
- Peel your potatoes then quarter them. Place potatoes in the microwave for 3 to 4 minutes. You want them soft enough for the tip of your knife to easily slide in the center, but not so soft that they are falling apart.
- After the potatoes cool for a minute or two, cut them into cubes.
- Place oil and butter on the griddle, then add potatoes and all of the seasoning. Toss everything to combine.
- Cook the potatoes for 8 to 10 minutes, flipping 2 or 3 times. Don’t play with the potatoes too much or they will not brown.
- Once browned on all sides, serve with some eggs and coffee!
