Diner Style Home Fries

Ingredients:

  • 3 russet potatoes
  • 1 Tbsp. of butter
  • Oil
  • 1/2 tsp. garlic powder
  • 1 tsp. paprika
  • Pinch of cayenne
  • Salt & pepper to taste

Directions:

  1. Heat griddle to 350-375 degrees.
  2. Peel your potatoes then quarter them. Place potatoes in the microwave for 3 to 4 minutes. You want them soft enough for the tip of your knife to easily slide in the center, but not so soft that they are falling apart.
  3. After the potatoes cool for a minute or two, cut them into cubes.
  4. Place oil and butter on the griddle, then add potatoes and all of the seasoning. Toss everything to combine.
  5. Cook the potatoes for 8 to 10 minutes, flipping 2 or 3 times. Don’t play with the potatoes too much or they will not brown.
  6. Once browned on all sides, serve with some eggs and coffee!
