Breakfast Fiesta Mix
Ingredients:
- 1 lb. sausage roll
- 15 oz. can diced potatoes
- 1/2 cup chopped onions
- 15 oz. can diced tomatoes
- 3/4 cup chopped green bell pepper
- 1/2 cup chunky salsa
- 1/2 Tbsp. hot pepper sauce
- 1/2 tsp. garlic powder
- 1/2 tsp. salt and pepper
Directions:
- Heat griddle to 375 degrees.
- Put the sausage roll on the griddle and break it up with a spatula.
- Place all other ingredients into a saucepan on the griddle.
- Continue to chop the sausage into crumbles and cook it until there is no more pink.
- Use a perforated spatula to add sausage to the other mixture while removing the grease. If you don’t have a perforated spatula, just try to drain the sausage the best you can.
- Let everything simmer in the pot for a few minutes, then top an omelet, burrito, biscuit, or whatever you want with it. It goes great with all breakfast items.
- This mix is similar to chili; it gets better the longer it sits, especially the next day. I like to make large batches of this and freeze it.
