Breakfast Fiesta Mix

Ingredients:

  • 1 lb. sausage roll
  • 15 oz. can diced potatoes
  • 1/2 cup chopped onions
  • 15 oz. can diced tomatoes
  • 3/4 cup chopped green bell pepper
  • 1/2 cup chunky salsa
  • 1/2 Tbsp. hot pepper sauce
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt and pepper

Directions:

  1. Heat griddle to 375 degrees.
  2. Put the sausage roll on the griddle and break it up with a spatula.
  3. Place all other ingredients into a saucepan on the griddle.
  4. Continue to chop the sausage into crumbles and cook it until there is no more pink.
  5. Use a perforated spatula to add sausage to the other mixture while removing the grease. If you don’t have a perforated spatula, just try to drain the sausage the best you can.
  6. Let everything simmer in the pot for a few minutes, then top an omelet, burrito, biscuit, or whatever you want with it. It goes great with all breakfast items.
  7. This mix is similar to chili; it gets better the longer it sits, especially the next day. I like to make large batches of this and freeze it.
