Bacon Goat Cheese Hash
Ingredients:
- 6 pieces of bacon
- 2 medium red potatoes
- 1/2 white onion, diced
- 1 green pepper, diced
- Goat cheese
- Fresh parsley
- 1 Roma tomato, sliced
- 4 eggs
- 1 Tbsp. everything bagel seasoning
- 1 tsp. garlic, minced
- 1/2 tsp. season salt & pepper
Directions:
- Dice potatoes, then microwave them for 3 minutes with about 1/4 cup of water.
- Heat griddle to 375-400 degrees and put down your potatoes and bacon.
- Using a steak weight on the potatoes is optional.
- Flip the bacon after 2 to 3 minutes and cook it all the way through. Remove the bacon and chop it up.
- Add peppers and onions to the griddle, and season the potatoes.
- When the potatoes start to brown and get crisp, lower the temperature to 300 degrees and cook your eggs as desired. Refer to the “Eggs to Order” recipe.
- Place your potatoes on a plate, top them with your eggs, chopped bacon, goat cheese, tomatoes, and fresh parsley.
- Grab yourself a Bloody Mary and enjoy!
